Ser Pepe is a fourth-generation organic estate run by Domenica Fiorentini and Pietro Bologna. Twenty-five years ago they made the decision to go fully organic — no chemical fertilisers, no additives, not a drop of chemistry — and all animal feed is produced on the farm itself. Their motto: "We only sell what we can't eat ourselves."

The Cinta Senese pigs — an ancient breed living in central Italy for over 1,000 years — roam freely with access to pools and sun shelters. While industrial pigs are slaughtered after a few months, these animals live on average more than two years.

Pietro's special passion is the Grey Donkey of Viterbo, a breed once thought extinct. After years of searching and DNA samples sent to university labs, he received official confirmation in 2013 that the Romanesque Viterbo breed survives. It is now legally protected.

Ser Pepe è un'azienda biologica di quarta generazione, gestita da Domenica Fiorentini e Pietro Bologna. I maiali di Cinta Senese — antica razza presente nell'Italia centrale da oltre 1.000 anni — vivono all'aperto con accesso a vasche e ripari dal sole. Mentre i maiali industriali vengono macellati dopo pochi mesi, questi animali vivono in media più di due anni.

La passione speciale di Pietro è l'asino grigio di Viterbo, una razza ritenuta estinta. Dopo anni di ricerche e campioni di DNA inviati a laboratori universitari, nel 2013 ottenne la conferma ufficiale: la razza romanica di Viterbo sopravvive. Oggi è protetta per legge.

Ser Pepe ist ein Bio-Landgut in vierter Generation, geführt von Domenica Fiorentini und Pietro Bologna. Vor 25 Jahren entschieden sie sich für komplettes Bio — keine chemischen Düngemittel, keine Zusatzstoffe, kein Tropfen Chemie —, und das gesamte Tierfutter wird auf dem Hof produziert. Ihr Motto: „Wir verkaufen nur, was wir nicht selbst essen können."

Die Cinta-Senese-Schweine — eine Urrasse, die seit über 1.000 Jahren in Mittelitalien lebt — genießen freien Auslauf mit Zugang zu Pools und Sonnenhütten. Während industrielle Mastschweine nach wenigen Monaten geschlachtet werden, leben diese Tiere durchschnittlich über zwei Jahre.

Pietros besondere Leidenschaft gilt dem Grauen Esel von Viterbo, einer Rasse, die als ausgestorben galt. Nach jahrelanger Suche und DNA-Proben an Universitätslabore erhielt er 2013 die offizielle Bestätigung: Die romanische Viterbo-Rasse existiert noch. Sie steht heute unter Naturschutz.
